The quick answer
Caramel pecan sticky buns are baked upside down: a butter-brown-sugar-pecan caramel schmear lines the pan bottom, the rolls bake on top, and you flip the pan within a couple minutes of baking so the warm caramel coats the buns before it sets.
Sticky buns are cinnamon rolls' more decadent cousin, and the magic is all in the pan. A brown-sugar-and-butter caramel goes down first, thick with pecans, and the rolls bake right on top of it. When you invert the pan warm, that caramel pours down over every bun and the pecans land candied and glistening — no frosting required. They're gloriously messy, and that's exactly the point.

Ingredients
Dough
- 1 cupwarm whole milk (about 110°F) — warm, not hot
- 2¼ tspinstant yeast — one packet
- ¼ cupgranulated sugar
- ⅓ cupunsalted butter, melted — cooled slightly
- 1 egglarge egg + 1 yolk — room temperature
- 4 cupsall-purpose flour — plus more to dust
- 1 tspfine salt
Caramel pecan schmear (pan bottom)
- ½ cupunsalted butter
- 1 cuppacked brown sugar
- 3 tbsppure maple syrup or honey
- 2 tbspheavy cream
- ½ tspfine salt
- 1¼ cupspecan halves
Cinnamon filling
- ⅓ cupunsalted butter, very soft
- ¾ cuppacked brown sugar
- 2 tbspground cinnamon
- ¼ tspfine salt

Instructions
Whisk warm milk, yeast, and 1 tsp of the sugar. Let it sit until foamy.
Surface looks foamy and smells yeasty.
Add remaining sugar, melted butter, egg and yolk. Mix in flour and salt, then knead until smooth and elastic.
Dough is smooth, tacky but not sticky.
Cover and let rise in a warm spot until doubled.
Dough has doubled in size.
For the schmear, melt butter with brown sugar, maple syrup, cream, and salt until smooth. Pour into a 9x13 metal pan and scatter the pecan halves evenly over it.
Caramel is glossy and evenly coats the pan bottom.
Roll the dough into a 16x12-inch rectangle. Spread with soft butter, then sprinkle the brown sugar, cinnamon, and salt to the edges.
Roll up tightly from the long edge, cut into 12 even buns, and set them cut-side up directly on top of the caramel and pecans.
Cover and proof until puffy and touching.
Buns look pillowy and have filled the pan.
Bake at 350°F until deep golden and bubbling at the edges.
Caramel bubbles up the sides; center bun reads about 190°F.
Cool just 2–3 minutes, then invert the whole pan onto a rimmed platter and leave it a moment so the caramel drips down before lifting the pan off.
Caramel and pecans coat the tops of the buns.
Make ahead, store & reheat
- Make ahead
- Assemble the buns over the caramel in the pan, cover tightly, and refrigerate overnight. Let sit at room temperature 45–60 minutes before baking. Don't refrigerate longer than 16 hours or the caramel stiffens too much.
- Storage
- Best the day they're made. Store covered at room temperature up to 2 days.
- Reheating
- Warm covered with foil at 300°F for about 10 minutes to loosen the caramel, or microwave a single bun 20 seconds.
- Freezing
- Freeze baked, inverted buns up to 1 month. Thaw and warm gently to re-soften the caramel.
Substitutions
- Walnuts or a mix of pecans and walnuts instead of pecan halves
- Whole milk plus 1 tsp melted butter instead of heavy cream
Troubleshooting
- Caramel stuck in the pan
- Invert within 2–3 minutes of baking while it's still fluid; if it sets, rewarm the pan on the stovetop for a minute to loosen.
- Caramel bubbled over in the oven
- Bake on a foil-lined sheet pan and don't overfill — a 9x13 with 12 buns is the sweet spot.

Frequently asked questions
- What's the difference between a sticky bun and a cinnamon roll?
- Sticky buns bake over a caramel-nut topping and get flipped, so the gooey coating is on the outside. Cinnamon rolls are baked right-side up and frosted.
- Why a metal pan?
- Metal conducts heat well so the caramel cooks evenly and stays fluid enough to invert cleanly. Glass works but the caramel can set faster at the edges.
- When exactly do I flip them?
- Cool just 2–3 minutes after baking. Too soon and it's dangerously hot; too long and the caramel sets and sticks.

Food safety: don't taste dough containing raw flour or raw egg. Refrigerate anything with cream cheese frosting, and reheat leftovers until piping hot.
