The quick answer

Whisk powdered sugar with vanilla and a little milk, one teaspoon at a time, until the glaze ribbons off the whisk. Drizzle over rolls that are warm but not hot so it flows before setting to a light shell.

When you want shine instead of a thick blanket of frosting, this is the finish to reach for. Powdered sugar, a splash of milk, and real vanilla bean whisk into a smooth glaze that pours in glossy ribbons and sets to a delicate crackle as it cools. The flecks of vanilla seed make it look bakery-made, and because there's no butter or cream cheese, it stays put at room temperature and lets the cinnamon flavor lead.

Ingredients

  • powdered sugar1.5 cup (180 g)
  • whole milk2 tbsp (30 g)
  • vanilla bean paste1 tsp
  • fine saltpinch

Instructions

  1. 1Sift the powdered sugar into a bowl to remove any lumps.
  2. 2Whisk in the vanilla bean paste and a pinch of salt, then add the milk one teaspoon at a time.
  3. 3Keep whisking until the glaze is smooth and pours off the whisk in a steady ribbon that disappears back into the surface after a couple of seconds.
  4. 4Drizzle over warm rolls in a back-and-forth motion; let it set for a few minutes into a light, glossy shell before serving.

Apply, adjust & store

Best applied when
rolls are warm but not hot, so the glaze flows before it sets
Storage
Best used fresh. Leftover glaze keeps covered in the fridge up to 3 days; whisk in a few drops of milk to loosen before using.
Consistency adjustments
Too thick and it won't pour — add milk half a teaspoon at a time. Too thin and it runs off — whisk in a spoonful more powdered sugar until it ribbons.

Food safety: this frosting contains dairy. Refrigerate leftover frosting, and refrigerate frosted rolls after a couple of hours at room temperature. Bring back to room temperature before serving.
